Easy-to-make Snacks & Meals to Reboot Metabolism

Along with our state’s stay-at-home orders came the struggle to stay active and eat healthy. With the studio closed and me working now immediately adjacent to my refrigerator, I have really had to work to not let COVID-19 get the better of my health and fitness and I’m sure I am not alone. So, I wanted to share these ideas for easy-to-make snacks and meals that are my go-to when I am trying to whip my metabolism back into shape:


  • Mango & Grapefruit - The sweetness of the mango counters the tartness of the grapefruit perfectly, giving you a huge boost of vitamin C and health benefits for the skin, blood pressure and heart!

  • Riced Veggies (Green Giant), Avocado, Isernio’s sausage (from Rosauer’s) with Frank’s hot sauce – I love Green Giant frozen veggies because there is nothing in them but veggies! No preservatives, no nothing, just veggies!

  • Spinach salad with Chicken & Beets and a homemade Balsamic Vinaigrette – I cook the chicken on food-prep-Sundays either in the crock pot or on the BBQ. The beets, once again by Green Giant – this time look for their frozen veggie spirals!

  • Egg scramblers with Kale, Sweet Potatoes & Cayenne – need I say more?

  • Spaghetti squash and shrimp with lemon & grape seed oil – I usually wing this without a recipe but if you need one to follow, check out: https://paleogrubs.com/spaghetti-squash-shrimp-scampi. Spaghetti squash is soooo easy to cook up!

  • My favorite “healthy” desserts: Dark Chocolate. Greek Yogurt with Berries. Dates, because they are the only dried fruit usually prepared without added sugar.

  • Tea – To keep me from snacking when I need something but it’s not mealtime. My favorites: Black Licorice or Bengal Spice
