Health-Minded, Easy-to-Make Snacks
Since the pandemic began, the hours I spend working at home (and immediately adjacent to my refrigerator) have skyrocketed, so I have to work that much harder to ensure I eat healthy. I figure I am not alone in this struggle, so, I wanted to share these health-minded ideas for easy-to-make snacks and meals that are my go-to:
Mango & Grapefruit - The sweetness of the mango counters the tartness of the grapefruit perfectly, giving you a huge boost of vitamin C and health benefits for the skin, blood pressure and heart!
Riced Cauliflower, Avocado, Isernio’s Sausage with Hot Sauce – I love frozen veggies because there is nothing in them but veggies (I reach for the organic brands when possible). I listed the Isernio's sausage because I find it to be a pretty decent brand when looking at the ingredients (you can find it at Rosauer's locally).
Spinach Salad with Chicken & Beets and a Homemade Balsamic Vinaigrette – I cook the chicken on food-prep-Sundays either in the crock pot or on the BBQ (or grab a rotisserie chicken from the store). The beets are spiralized packages, purchased in the frozen food section then thawed.
Steel-Cut Oats with Organic Gogi Berries and Chocolate Whey Protein
Egg Scramblers with Kale, Sweet Potatoes & Cayenne – need I say more?
Spaghetti Squash and Shrimp with Lemon & Grape Seed Oil – I usually wing this without a recipe but if you need one to follow, check out: https://paleogrubs.com/spaghetti-squash-shrimp-scampi. Spaghetti squash is soooo easy to cook up!
My Favorite “Healthy” Desserts - Dates (because they are the only dried fruit usually prepared without added sugar), or bowls with cinnamon, berries, and unsweetened coconut flakes, or simply a little bit of dark chocolate.
Tea – To keep me from snacking when I need something but it’s not mealtime. My favorites: Black Licorice or Good Earth's Sweet and Spicy.
